Homemade Vegan Classic Lasagne Recipe
This wholesome lasagna is all about hearty flavor! This vegan lasagna recipe is packed with classic Italian flavor but lacks meat and dairy. It's going to be your new favorite lasagna recipe- full of flavor, healthy, and super satisfying.
Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 Cup mushrooms, sliced
- 1 bell pepper, chopped
- 2 cups spinach leaves
- 2 cups vegan ricotta cheese
- 1 Cup vegan mozzarella cheese
- 1 Cup marinara sauce
- 12 whole wheat lasagna noodles
- salt and pepper to taste

Directions
Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to the instructions on the package.
In a large skillet, heat the olive oil over medium heat.
Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
Add the mushrooms and bell pepper, cooking until they are softened.
Add the spinach leaves, cooking until they are wilted.
Add the marinara sauce to the vegetable mix, season with salt and pepper, and stir well.
Spoon a layer of marinara sauce into the bottom of a lasagna dish.
Place a layer of lasagna noodles on top of the sauce.
Spread a layer of vegan ricotta cheese over the noodles.
Add the vegetable mixture on top of the ricotta, followed by a layer of vegan mozzarella.
Repeat the layers in the same order, finishing with a layer of vegan mozzarella on top.
Cover with foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and bake for another 15 minutes, or until the cheese is bubbling and the lasagna is heated through.
Let it cool for a few minutes before slicing and serving. Enjoy!
