Homemade Creamy Pesto Sauce Gnocchi

Ingredients
- 1 lb of gnocchi
- 2 cups of fresh Basil leaves
- 2 cloves of garlic
- 1⁄4 Cup pine nuts
- 0.6 Cup extra-virgin olive oil, divided
- 1⁄2 Cup freshly grated Pecorino cheese
- Salt and freshly milled black pepper, to taste
- 1⁄2 Cup freshly grated parmesan cheese

Cook the gnocchi as instructed on the package, drain and set aside.
Gather your pesto ingredients. In a food processor, combine the fresh basil, garlic and pine nuts. Pulse until coarsely chopped.
Add in the half cup of the olive oil and process until fully incorporated and smooth. Season with salt and pepper.
If using right away, add the remaining oil and pulse until smooth. Stir in the cheese.
If freezing, transfer to an airtight container and pour in the rest of the oil on top then freeze. Stir in cheese once thawed and ready to use.
Toss the cooked gnocchi with the pesto sauce until evenly coated. Sprinkle with grated Parmesan cheese on top.
