Ingredients
- 1 flaxseed egg
- 1⁄2 Cup peanut butter
- 1⁄4 Cup red kuri squash puree
- 1⁄3 Cup coconut sugar
- 2 tablespoon maple syrup
- 1 spoon pumpkin pie spice
- 1⁄4 spoon baking soda
- 1⁄3 Cup quinoa flour

Directions
In a glass with 3 tablespoons of water, add 1 tablespoon of flaxseed meal and stir.
In a bowl add the peanut butter, pumpkin puree, coconut sugar and maple syrup. Stir together.
Add the pumpkin pie spice, a pinch of salt, baking soda and quinoa flour. Stir until a sticky dough forms.
Spoon into balls and place on a baking sheet lined with baking paper.
Sprinkle a little coconut sugar over the balls. Bake at 180°C for 13 minutes.
Remove from the oven and leave to cool. Enjoy!
