Ingredients
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tbls butter
- 2 tbls flour
- 5 cups fish or chicken broth
- 4 potatoes
- 1 Cup celery, chopped
- 1 Cup carrots, chopped
- 1 Cup sweet corn
- 1 Cup heavy cream
- 1 lb fresh seafood (such as shrimp, scallops and fish) chopped
- salt and pepper to taste
- Chopped fresh parsley or chives for garnish

Directions
In a large pot, melt butter.
Add the chopped onion and minced garlic and sauté until the onion is translucent.
Sprinkle the flour over the onion mixture and stir to combine.
Gradually add the broth, stirring constantly to avoid lumps from forming.
Add the potatoes, celery, carrots, and corn and bring to a boil.
Reduce heat to low and simmer for 20-25 minutes, or until the potatoes are tender.
Add the chopped seafood and heavy cream and cook for an additional 5-10 minutes, or until the seafood is cooked through.
