Vietnamese Lemongrass Marinated Beef Rice Noodles Salad
This dish, known as Bun Bo Xao is a light yet flavorful Vietnamese dish. It features tender pieces of marinated beef, fresh vegetables, and rice noodles tossed with a tangy lime dressing. This salad is perfect for those in search of a healthy, satisfying meal with an Asian flair.

- 500 g beef, thinly sliced
- 2 Stems lemongrass, minced
- 4 cloves garlic, minced
- 3 tbls soy sauce
- 2 tbls fish sauce
- 1 tablespoon sugar
- 1 tablespoon vegetable oil
- 200 g thin rice noodles
- 2 cups mixed salad greens
- 1 cucumber, thinly sliced
- 2 cups bean sprouts
- Fresh mint and cilantro (for garnishing)
- Roasted peanuts (for garnishing)
For the dressing:
- 2 limes, juiced
- 2 tbls fish sauce
- 1 tablespoon sugar
- 1 chili padi or red chili, finely chopped

Directions
Start by marinating the beef. Combine minced lemongrass, garlic, soy sauce, fish sauce, and sugar in a bowl. Add beef and let it marinate at least 15 minutes, best if overnight.
In a large pan, heat vegetable oil over medium-high heat. Add the marinated beef and stir-fry until it is cooked, about 5-7 minutes. Remove from heat.
Prepare the rice noodles as per the package instructions. Set aside.
To assemble the salad, divide the mixed greens, cucumber, bean sprouts and rice noodles equally among four bowls. Top with cooked beef. Garnish with mint, cilantro, and roasted peanuts.
For the dressing, mix lime juice, fish sauce, sugar and chopped chili in a small bowl. Stir until sugar dissolves.
Drizzle the dressing over each salad before serving.
