Vegetable salad with tofu
This salad is my favorite for its delicious combination of flavors. It's a simple yet delicious way to incorporate tofu into your diet. I regularly make it as a quick and healthy dinner.
Ingredients
- 200 g tofu
- 100 g black olives
- 1 a piece onion
- 2 a piece ripe tomatoes
- pinch of salt
- Black ground pepper
- 2 tablespoon olive oil
- Fresh basil or parsley for garnish (optional)

Directions
Cut the tofu into small cubes.
Then in a bowl, mix together the tofu, chopped black olives, chopped onion and chopped tomatoes.
Add salt and ground black pepper to taste and mix everything together. You definitely don't need to add a lot of salt, as the olives are already quite salty by nature.
Finally, add the olive oil and stir. When choosing the oil, I advise reaching for extra virgin olive oil, which will give the salad a unique flavour.
As a last step, you can garnish the salad with fresh basil or parsley (or any other herb you like).
