German bread, also known as Bauernbrot is a rustic, hearty Rye bread that is the perfect accompaniment for soups, cold cuts, or just spread with butter and jam. - 2 cups of Rye flour
- 11⁄2 cups of bread flour
- 11⁄2 cups of warm water
- 11⁄2 teaspoon of active dry yeast
- 11⁄2 teaspoon of salt
- 1 tablespoon of caraway seeds (optional)
- Cornmeal for dusting

In a large bowl, combine the warm water and yeast. Allow it to sit for about 5 minutes until frothy.
Mix in the salt, rye flour, bread flour, and caraway seeds (if using) into the yeast mixture. Stir until a soft dough forms.
Knead the dough on a lightly floured surface for about 10 minutes, until it is smooth and elastic.
Place the dough in a greased bowl, cover, and allow it to rise in a warm place for 2 hours, or until it has doubled in size.
Preheat your oven to 450 degrees F and dust a baking sheet with cornmeal.
Shape the dough into a round loaf and place it on the prepared baking sheet. Make a few shallow slashes on top of the loaf with a sharp knife.
Bake for 30 minutes, or until the bread is golden and makes a hollow sound when tapped on the bottom.
