Traditional Mexican Beef Enchiladas

Ingredients
- 1 tablespoon vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 lb ground beef
- 1 teaspoon cumin
- 1 teaspoon Chilli Powder
- 1⁄2 teaspoon paprika
- salt and pepper to taste
- 1 can tomato sauce
- 8 flour tortillas
- 1 Cup shredded cheddar
- Chopped fresh cilantro, for garnish

Directions
In a large skillet, heat the vegetable oil over medium heat. Saute garlic and onion.
Add the beef and cook until browned.
Mix all the spices with tomato sauce, salt, and pepper, stirring well to evenly distribute. Cook for 2 minutes to allow the flavors to meld together.
Preheat the oven to 375°F (190°C). Prepare a baking dish by lightly greasing it.
Warm the flour tortillas in the microwave or on a griddle to make them pliable. Spoon a generous amount of the meat mixture onto each tortilla, rolling them up tightly and placing them seam-side down in the greased baking dish.
Pour the enchilada sauce evenly over the rolled tortillas, making sure to coat them entirely.
Sprinkle the shredded cheddar the top of the enchiladas, covering them completely.
Cover the baking tray with foil and bake in preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove the foil and broil for an additional 2-3 minutes, or until the cheese is golden brown and slightly crispy.
Garnish with freshly chopped cilantro before serving.
