Ingredients
- 300 g grapes
- 300 g sultanas
- 100 g apricots
- 100 g dried figs
- Zest and orange juice
- 100 ml Cointreau
- 1 tablespoon vanilla essence
- 175 g unsalted butter
- 175 g brown sugar
- 3 egg
- 125 g self-rising flour
- 2 tablespoon cocoa powder
- 1 tablespoon cinnamon
- 1 tablespoon ground cloves
- 2 spoon mixed spice
- 1 tablespoon brandy

Directions
In a bowl, place the fruit, orange zest, and juice, Cointreau and vanilla. Stir well and cover with cling film. Leave to stand for 24 hours.
In another bowl, beat well the butter and sugar. Then add the beaten eggs, flour, cinnamon, cloves and mixed spices.
Add the fruit mixture and stir well.
Place the batter in a greased baking pan and bake at 150°C for 100 minutes. Leave to cool completely.
Wrap the cake in cling film and store in a cool place for three months.
Before christmas, unwrap the cake and sprinkle over brandy. Wrap again and repeat this procedure a few times.
Serve and enjoy.
