Traditional East African Chicken Rice Pilau
A hearty and aromatic dish from East Africa, Pilau is full of flavorful spices and tender pieces of meat. It is not only a tantalizing dish packed with traditional African flavors but also quite healthy. The preparation may take a bit of time, but the result is highly rewarding. Ingredients
- 2 cups basmati rice
- 11⁄2 lbs Beef or Chicken, cut into chunks
- 4 cups water
- 2 large Onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tbls Pilau Masala
- 1 teaspoon turmeric powder
- 1⁄2 teaspoon cinnamon powder
- 3 cardamom pods
- 3 tbls vegetable oil
- salt to taste

Directions
Heat the oil in a large saucepan over medium heat. Add the onions, garlic, and ginger and cook until they're soft and fragrant.
Add the beef or chicken to the pan and cook until it's brown on all sides.
Add the Pilau Masala, Turmeric, Cinnamon, Cardamom, and salt to the pan and stir everything to combine.
Rinse the rice under cold water until the water runs clear. Add the rice to the pan and stir everything together.
Add the water to the pan and bring everything to a boil. Reduce the heat to low, cover the pan, and let everything simmer for about 20 minutes or until the rice is cooked and all the water is absorbed.
Once the rice is cooked, fluff it with a fork and serve the Pilau hot.
