Directions
To prepare the Italian tortellini pan, first chop the onions and garlic. When using garlic, I always recommend crushing it first and then chopping it to release as much flavor as possible.
Cut the peppers and tomatoes into bite-sized pieces. The size is of course a matter of taste, but I prefer smaller pieces as they cook faster and mix well with the tortellini.
Place a large frying pan with the olive oil over a medium heat. Once the oil is hot - it should shimmer a little but not smoke - add the onion and garlic.
Once the onions are translucent, add the peppers and fry for about 5 minutes until soft.
Add the tortellini and tomatoes and fry for a further 5-7 minutes, stirring constantly. The tortellini should also be a little crispy on the outside - an absolute must for me!
Season with salt and pepper, add the mini mozzarella balls and mix well until the cheese melts a little.
Remove the tasty Italian tortellini pan from the heat and garnish with fresh basil.
