Directions
Start by preheating the oven to 180 degrees Celsius. I guarantee this step is important as a preheated oven ensures even cooking of the chicken.
Clean the chicken, remove excess fat and then dry it well. I recommend you do this, because the flavors will soak in better.
Prepare the filling: In a frying pan, sauté the chopped onion and garlic in a little olive oil until soft and translucent. Add the serrano ham and chopped walnuts with the diced apple. Then add the bread crumbs and mix well.
Let it cool a bit and then add the beaten egg (this will act as glue for your stuffing, making it mix evenly into the chicken). Make sure it is well combined.
Stuff the chicken with this preparation. Do not overfill the chicken as the stuffing expands during cooking and could break the skin of the bird.
Sew the chicken so that the stuffing does not escape. My recommendation is to use kitchen twine because it is heat resistant and will not break during cooking.
Drizzle the chicken with olive oil, salt and pepper. Place in the oven and bake for 1 hour and 30 minutes or until the chicken is golden brown and juicy.
Serve in thick slices so that each portion has a good amount of filling.
You will enjoy preparing and eating this stuffed chicken. You can serve it with a fresh salad or mashed potatoes.
