Sri Lankan Chicken Kottu Roti Stir-Fry
Chicken Kottu Roti is a scrumptious street food dish that is very popular in Sri Lanka. The dish is a combination of shredded, stir fried roti (bread) and is typically served with sauced chicken and vegetables. This dish is unique, packed with fiery flavors and is certainly a treat for spice lovers. It's Packed with proteins, carbs and fibre, it is an all-in-one meal to satiate you.
Ingredients
- 4 Roti (Sri Lankan type or parathas/flatbread if unavailable)
- 2 chicken breasts
- 2 cloves of garlic, minced
- 1 large onion, chopped
- 2 Carrots, julienned
- 1 bell pepper, thinly sliced
- 2 Green chillies, chopped
- 2 eggs
- 2 Tomatoes, chopped
- 2 tbls of soy sauce
- 1 tablespoon of curry powder
- salt to taste
- Pepper to taste
- 2 tbls of Cooking oil

Directions
Start by boiling the chicken breasts until fully cooked, then shred them into small pieces.
While the chicken is boiling, chop the roti into small pieces (roughly 1-inch squares).
Heat a wok or large frying pan over a medium heat and add the oil.
Once the oil is heated, add the chopped onion and garlic and stir-fry until they turn light golden.
Next, add the julienned carrots, bell pepper and chopped green chilies into the pan and stir-fry for a couple of minutes.
Push the vegetables to the side of the pan and crack the eggs into the cleared area. Scramble the eggs and mix them with the vegetables.
Add the shredded chicken, chopped tomatoes, curry powder, soy sauce, salt, and pepper, stirring well to combine.
Finally, add the chopped roti and stir-fry for an additional 2-3 minutes until all ingredients are well combined.
Your Chicken Kottu Roti is ready to be served!
