Simple Vegan Italian Lemon Garlic Gnocchi

Ingredients
- 2 cups of vegan gnocchi
- 5 cloves of garlic, minced
- Juice and zest of one large lemon
- 2 tbls of vegan butter or olive oil
- Salt & pepper to taste
- 1 tablespoon of fresh chopped parsley
- 1 Cup of fresh spinach
- 1 teaspoon of chili flakes (optional)
- Vegan Parmesan cheese for garnish (optional)

Directions
Bring a large pot of salted water to a boil. Add gnocchi and cook according to package directions, usually about 2-3 minutes or until they float. Drain and set aside.
In a large pan, heat the vegan butter or olive oil over medium heat.
Add the minced garlic and chili flakes (if you like it spicy) to the pan and sauté until the garlic is lightly golden.
Add the cooked gnocchi to the pan and toss to coat in the garlic. Season with salt, pepper, and half of the lemon zest.
Cook for a couple of minutes until the gnocchi starts to turn golden at the edges.
Add in the spinach, the rest of the lemon zest, and lemon juice. Stir until the spinach is slightly wilted and the gnocchi is well coated with the sauce.
Remove from heat and garnish with fresh parsley and vegan parmesan, if using. Serve immediately.
