Simple Herby Greek Lamb Marinade
This Greek Lamb Marinade is incredibly simple, yet transformative. Infusing the lamb with fragrant herbs and spices marvelously uplifts its distinctive flavor.
Ingredients
- 11⁄2 kg lamb leg or shoulder, cut into pieces
- 4 cloves garlic, finely minced
- 2 tablespoon of dried oregano
- Zest and juice of two lemons
- 2 tbls of olive oil
- 1 teaspoon of salt
- 1 teaspoon of freshly ground black pepper
- 1⁄2 teaspoon of ground cinnamon

In a large mixing bowl that can accommodate the lamb pieces, combine the minced garlic, oregano, lemon zest, lemon juice, olive oil, salt, black pepper, and cinnamon. As you mix, you will notice an aromatic blend emerging which is characteristic of Greek cuisine.
Add in the lamb pieces to the bowl. I recommend using your hands to massage the marinade into each piece, ensuring that the meat is fully coated for a uniformly flavored end product. Be careful to avoid any cuts as lemon juice can make it sting.
Cover the marinated lamb with cling film or transfer it to a ziplock bag, then refrigerate for a minimum of 2 hours. If you have the luxury of time, let it marinate overnight. This allows the flavors to penetrate the meat deeper producing a more delicious meal.
Finally, cook the lamb as per your preference. I personally love grilling it as it imparts a beautiful smoky flavor to the meat that complements the herby marinade. However, roasting or pan-frying works just as well. The marination process ensures that the lamb remains juicy and tender, no matter the cooking method.
