Directions
Start by heating the olive oil in a large pot over medium-high heat. As a seasoned cook, I'd like to share a tip: Be patient with the oil. Wait until it's shimmering to know it's ready.
Add in the ground turkey, breaking it apart with a wooden spoon. Cook it until it's browned, which generally takes about 10 minutes. This step is crucial as it enhances the flavor of the chili.
Once the turkey is browned, add the onion, bell pepper, carrots, and garlic. Cook until the vegetables have softened. It typically takes around 5-7 minutes. Cooking the vegetables before adding any liquid leaches out their flavor, making the chili more appetizing.
Stir in the chili powder, cumin, oregano, salt, and pepper. This step is all about layering flavors and gives the chili a deep, rich taste.
Add the diced tomatoes, chicken broth, kidney beans, black beans, and corn to the pot. Bring the mixture to a simmer.
Allow the chili to simmer for about 30-45 minutes. This not only allows the flavors to meld together but also reduces the broth to a rich consistency.
Serve hot, preferably with crusty bread or tortilla chips. You might want to top each serving with shredded cheese and sour cream for an added oomph.
