- 500 g white fish fillets
- 1 egg
- 1 tablespoon red curry paste
- 1 teaspoon sugar
- 1 tablespoon fish sauce
- Cup green beans, finely sliced
- 1⁄2 Cup fresh coriander, chopped
- 1⁄2 Cup sweet chilli sauce, for serving
- Vegetable oil for deep frying

Place the fish fillets, egg, red curry paste, sugar, and fish sauce in a food processor and pulse until it forms a paste.
Transfer the fish paste to a bowl, then stir in green beans and chopped coriander.
Heat oil in a frying pan over medium heat. Shape the fish paste into small patties and fry them until golden brown, about 5 minutes on each side. Make sure not to overcrowd your pan.
Use a slotted spoon to remove the fish cakes from the pan and drain them on paper towels.
Serve the Thai Fish cakes hot, with sweet chilli sauce on the side for dipping.
