- 4 boneless skinless chicken breasts, pounded to even thickness
- 1 Cup all-purpose flour
- salt and pepper to taste
- 2 large eggs
- 1 Cup breadcrumbs
- 1 Cup Parmesan cheese, grated
- 1 Cup mozzarella cheese, grated
- 2 cups marinara sauce
- 2 tbls olive oil
- Fresh basil leaves for garnish
- 200 gms cooked spaghetti

Start by preheating the oven to 190°C, grease a baking dish and set aside.
Season chicken breasts with salt and pepper. In one shallow bowl, place the flour. In a second bowl beat the eggs, and in a third bowl combine breadcrumbs and Parmesan cheese.
Roll each chicken breast into the flour, then dip into the beaten eggs, and then dredge in the breadcrumb-Parmesan mixture. Ensure all sides are well coated.
Heat olive oil in a pan over medium heat. Cook the chicken for about 3-4 minutes on each side until golden brown. Transfer to the previously greased baking dish.
Spoon marinara sauce over each chicken breast, top with mozzarella cheese. Bake for 20-25 minutes or until chicken is cooked through and cheese is bubbly and slightly browned.
Serve the Chicken Parmesan hot with cooked spaghetti, garnish with fresh basil.
