- 1 eggplant
- 1 zucchini
- 1⁄2 onion
- 1⁄2 red bell pepper
- 20 g arugula
- 60 ml olive oil
- 20 ml balsamic vinegar

1. Step
Cut eggplant and zucchini rounds with skin on and roast in the oven for 10 minutes. Set aside.
2. Step
Cut the onion into thin slices. Cut the pepper into cubes. Wash the rocket/arugula leaves. Mix all the ingredients together and set aside.

Cut chicken strips 1 cm on each side and sauté for 3 minutes in olive oil.

Make a vinaigrette by dissolving the salt and pepper in the vinegar, add the oil in a trickle and mix to emulsify.
