Roast Whole Chicken with Fresh Herb Stuffing
The herb stuffing is what makes this roast chicken extra special. It imparts so much flavor to the chicken, and it leaves your kitchen smelling wonderful.

- salt and pepper to taste
- 3 tbls of olive oil
- 1 lemon, quartered
- 4 cloves garlic, crushed
- A bunch of fresh rosemary
- A bunch of fresh thyme
For the Herb Stuffing:
- 1 large onion, finely chopped
- 2 Stems celery, finely chopped
- 1 fresh bread loaf, torn into small pieces
- 1⁄2 Cup of parsley, chopped
- 1 tablespoon of sage, chopped
- 1 tablespoon of rosemary, chopped
- salt and pepper to taste
- 1 Cup of chicken broth

Preheat your oven to 375°F (190°C). It's crucial to let the oven preheat fully to ensure that the chicken roasts evenly.
Rub the chicken all over with olive oil, salt, and pepper. This will help you achieve that beautiful golden, crispy skin.
In the cavity of the chicken, place the lemon quarters, garlic cloves, rosemary, and thyme. This imparts a mild flavor to the chicken from inside out.
For the herb stuffing, melt some butter in a pan, then add the onion and celery until soft. Add in the bread pieces, parsley, sage, rosemary, salt and pepper stirring together until well combined. Use the chicken broth to moisten the mixture. Mix them well and let it cool slightly before stuffing in the chicken. Stuffing should not be packed tightly, as it might not cook evenly.
Place the stuffed chicken on a roasting rack and roast for about 20 minutes per pound, or until the chicken's internal temperature reaches 165°F (74°C).
