Red Lentil Salad
This salad is ideal for summer lunches or dinners. You can also replace the mozzarella with feta cheese for a different flavor variant.

Red lentils
- 150 g red lentils
Salad
- 100 g arugula
- mozzarella
- 1 pcs carrot
- 1 pcs red onion
- 1 pcs paprika

- 1 ts Dijon mustard
- 1 pcs lemon
- salt and pepper

1. Step
We cook red lentils according to the instructions on the package and let it cool down.
2. Step
We slice the onion, mozzarella, carrot and pepper.
3. Step
Heat olive oil in a pan, add Dijon mustard and squeezed lemon juice. Season with salt and pepper. Cook for 2 minutes and then remove from heat.
4. Step
In a bowl, mix all the ingredients and drizzle with dressing. Let it sit for 5 minutes and then serve.
