This recipe for Christmas cookies is an absolute must for my family during the festive season. Perfecting these treats takes a little practice and a lot of love. But once you've experienced the heavenly aroma that fills your home while these delicacies bake in the oven, you'll happily return to this recipe year after year.
Ingredients
- 225 g Butter, soft
- 200 g White sugar
- 2 Eggs
- 1 Teaspoon vanilla essence
- 375 g all-purpose flour
- 1 Teaspoon baking soda
- 1⁄2 Teaspoon salt
- 150 g Powdered sugar for dusting

To bake Christmas cookies, start by beating the softened butter and white sugar in a large mixing bowl until they are nice and fluffy. This step should not be skipped, as it is the beating of the butter and sugar that results in soft and tender cookies.
Now beat in the eggs one at a time. Make sure that the first egg is fully incorporated before adding the second. Now add the vanilla and beat everything well.
In a medium bowl, combine the flour, baking powder and salt. Gradually add these dry ingredients to your butter mixture. Stir just until no more flour is visible to avoid a tough pastry.
Use an ice cream scoop or a tablespoon to form balls of dough and place them on a baking tray lined with baking paper. Make sure you leave enough space between the cookies so that they can expand during baking.
Bake the cookies at 190°C for about 8-10 minutes, or until lightly golden brown around the edges. They may still be a little soft in the center, but they will firm up as they cool.
When you take the Christmas cookies out of the oven, leave them to cool on the baking tray for a few minutes before transferring them to a cooling rack. Once they have cooled completely, dust the Christmas cookies generously with powdered sugar for a beautiful snowy look.
