Quick fruit cake
Tasty and quick fruit cake with mascarpone, which even a beginner in the kitchen can prepare.
Ingredients
On the body:
- 200 g flour
- 150 g sugar
- 125 g butter
- 4 a piece Eggs
- 1 teaspoon baking powder
For the cream:
- 500 g mascarpone
- 200 g confectionery sugar
- lemon juice
For decoration:
- fresh fruits

You start by preparing the cake shell. In a bowl, mix together the flour, sugar, butter, eggs and baking powder. The batter should be smooth and lump-free, so mix it well. Then pour the batter into the cake tin and bake in a preheated oven at 180 degrees for about 20 - 25 minutes.
Either bake a double batch and cut through or bake 2 separate shells.
Meanwhile, while the crust is baking, prepare the mascarpone cream. Mix the mascarpone, sugar and lemon juice thoroughly until you get a creamy consistency.
When the cake is cooled, spread the mascarpone cream on top and place the fresh fruit on top.
Leave this fruit cake in the fridge for at least an hour or two to allow the cream to set properly.
