Quick & Easy Chicken and Sweet Corn Soup
Chicken and Corn Soup is a dish that combines tender meat and flavorful corn. It's easy to prepare and guaranteed to warm your soul.
Ingredients
- 2 chicken breasts, cooked and shredded
- 1 Cup sweet corn kernels
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 Stems celery, chopped
- 4 cups chicken broth
- 1 Cup milk
- 2 tbls all-purpose flour
- 2 tbls butter
- 1 teaspoon dried thyme
- salt and pepper to taste
- Fresh parsley, chopped (for garnish)

Directions
In a large pot, melt the butter. Add onion and minced garlic, saute until translucent.
2 Add the chopped carrots and celery, and cook for few minutes until slightly tender.
Sprinkle the flour over the vegetables, then stir well.
Slowly pour in the chicken broth while stirring continuously. Bring the mixture to a boil.
Reduce the heat to low and add the shredded chicken and sweet corn kernels to the pot. Stir well.
Season the soup with dried thyme, salt, and pepper. Simmer for about 15 minutes, stirring occasionally.
Pour in the milk and bring the soup back to a gentle simmer. Cook for an additional 5 minutes.
Taste and adjust the seasoning if needed.
Ladle the soup into bowls and garnish with fresh chopped parsley.
