Quick & Easy Baked Rice Stuffed Tomatoes
Stuffed tomatoes are a classic dish that bring a touch of elegance to any meal. Fresh, ripe tomatoes are filled with a hearty mixture of ground meat, rice, and bell peppers, then baked until beautifully blistered and warm. Ingredients
- 8 medium ripe tomatoes
- 1 lb ground beef or turkey
- 1⁄2 Cup uncooked rice
- 1 small onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 clove garlic, minced
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 1 Cup grated cheese (cheddar or mozzarella)
- 1 tablespoon olive oil

Preheat your oven to 350°F (175°C).
Cut off the tops of the tomatoes and using a spoon, hollow out the insides. Keep the pulp, chop it up, and set it aside.
Heat the olive oil in a large skillet over medium heat. Add onion, bell pepper, and minced garlic, sauté until softened, about 4-5 minutes.
Add the ground meat to the skillet, breaking it up into small bits. Cook until fully browned.
Stir in the rice, the chopped tomato pulp, salt, and pepper. Let the mixture simmer until the rice is cooked, about 15-20 minutes.
Once the stuffing mixture is done, spoon it into the hollowed tomatoes. Place the stuffed tomatoes upright in a baking dish.
Sprinkle the tops with cheese and bake for 20-25 minutes until the cheese is melted and slightly browned.
