Soaking Dates
- 250 g pitted dates
- 1 teaspoon baking soda
- 200 g boiling water
Sticky Toffee pudding batter
- 125 g unsalted butter
- 100 g brown sugar
- 1 teaspoon vanilla essence
- 2 egg
- 200 g All Purpose Flour
- 2 teaspoon baking soda
Butterscotch sauce
- 1⁄2 Cup brown sugar
- 30 g Butter Unsalted
- 150 ml heavy cream

Directions
Chop the dates into small pieces, then add hot boiling water and baking soda. Soak for 20 minutes and set aside. Then, crush the dates until it looks like a sludgy porridge.

Add vanilla essence and eggs. Mix well.

Fold in the flour and baking powder. Then, add the soaked dates to the batter. Mix well until incorporated.

Pour the batter into the lined baking tray and bake in a preheated oven to 180°C for 20 minutes.

Heat a pan on medium heat, add the brown sugar, melt it and cook until it is a bit darker in colour for 1 minute. Then, add the butter and mix well until incorporated. Then, add the cream and whisk well.
