Pulled Pork in Smoker

Ingredients
Spice Rub
- 2 tbls brown sugar
- 2 tbls paprika
- 1 tbls black pepper
- 1 tablespoon salt
- 1 teaspoon cayenne pepper
Meat and Smoke
- 1 pork shoulder, about 4-5 pounds
- 6 wood chunks hickory or apple
Serving
- 8 buns soft
- 1 Cup barbecue sauce
- 1 Cup coleslaw

Directions
Prepare the spice rub by mixing all the ingredients in a small bowl.
Rinse the pork shoulder and pat dry with paper towels.
Apply the spice rub all over the pork, cover with plastic wrap, and refrigerate for at least 2 hours or overnight.
Prepare the smoker and preheat to 225 degrees Fahrenheit.
Add the wood chunks to the smoker and place the pork shoulder on the grate.
Smoke the pork for about 1.5 hours per pound, or until the internal temperature reaches 195 degrees Fahrenheit.
Remove the pork from the smoker and let rest for 30 minutes.
Pull the pork apart with two forks, discarding any fat. Mix with barbecue sauce, if desired, and serve on buns with coleslaw.
