Perfect Oven Baked Pork Leg Roast Recipe

Ingredients
- 1 whole pork leg
- 4 cloves of garlic, minced
- 2 tbls fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- salt and pepper to taste
- 2 tbls olive oil
- 2 onions, cut into quarters
- 2 carrots, cut into large chunks
- 1⁄2 Cup dry white wine
- 11⁄2 cups of chicken stock

Preheat the oven to 325°F (165°C).
Mix the minced garlic, chopped rosemary, chopped thyme, salt, pepper, and olive oil in a bowl to make a marinade.
Rub the marinade generously all over the pork leg roast, ensuring to get it into any crevices. Leave the leg to absorb the marinade for an hour.
Place the quartered onions and chopped carrots at the bottom of a roasting pan.
Place the marinated pork leg on top of the vegetables in the roasting pan, ensuring it is not touching the bottom of the pan.
Pour the white wine and chicken stock into the bottom of the roasting pan.
Place the roasting pan in the oven and roast for about 5 hours, or until the internal temperature of the pork leg reaches 165°F (74°C).
