Old-Fashioned Oven Baked Porcupine Meatballs
Porcupine Meatballs are a crowd-pleasing, easy-to-make, savory dish that is perfect for quick at-home dinners or special occasions. These unique meatballs get their porcupine name from the rice that gets added to the meatball mixture, giving the appearance of porcupine quills sticking out once it's cooked. They taste as delightful as they look!
Ingredients
- 11⁄2 Pounds ground beef or turkey
- 3⁄4 Cup uncooked long grain white rice
- 11⁄2 Cup water
- 1⁄4 Cup chopped Onions
- 1⁄2 teaspoon salt
- 0.125 teaspoon garlic powder
- 0.125 teaspoon ground black pepper
- 1 can tomato sauce
- 2 tbls brown sugar
- 2 tbls Worcestershire Sauce

Directions
In a mixing bowl, combine ground beef with rice, 1/2 cup of water, chopped onion, salt, celery salt, garlic powder, and black pepper.
Form this mixture into about 12 to 18 meatballs. Arrange the meatballs in a baking dish.
In a separate bowl, mix together the tomato sauce, water, Worcestershire sauce, and brown sugar. Pour this sauce generously over each meatball in the baking dish.
Cover the baking dish with a lid or aluminum foil and bake at 350 degrees F (175 degrees C) for about 45 minutes. Uncover and bake again for an additional 15 minutes, or until the meatballs are thoroughly cooked and sauce has thickened.
Allow it to cool for a few minutes before serving warm.
