Ingredients
- 4 boneless skinless chicken thighs
- 2 tbls olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 tablespoon lemon juice
- 1 Cup cherry tomatoes, halved
- 1 Cup mixed olives
- 1⁄2 Cup fresh basil leaves, chopped
- 1 Cup cooked quinoa or farro
- salt and pepper to taste

Preheat your oven to 200°C (400°F).
In a large bowl, combine the olive oil, minced garlic, dried oregano, lemon juice, salt, and pepper. Add the chicken thighs and toss until they are well coated with the marinade. Let sit for at least 15 minutes.
Transfer the chicken thighs to a baking dish, then add the cherry tomatoes and olives.
Bake for 20-25 minutes until the chicken is cooked through and the tomatoes have softened.
Sprinkle the fresh basil leaves on top of the chicken, then serve over the cooked quinoa or farro.
