This Mediterranean Inspired Lamb Marinade is the secret to creating a lamb dish that is bursting with robust flavors and succulence that will truly melt in your mouth.
Ingredients
- 1⁄4 Cup of olive oil
- 2 cloves of garlic, minced
- 1 tablespoon of fresh rosemary, finely chopped
- 1 tablespoon of fresh thyme, finely chopped
- 1 tablespoon of fresh oregano, finely chopped
- Zest and juice of one lemon
- 1 teaspoon of salt
- 1⁄2 teaspoon of black pepper

Begin by prepping the marinade mixture. Combine the olive oil, minced garlic, chopped rosemary, thyme, and oregano in a bowl. I recommend using fresh herbs over dried ones for this recipe as they really enhance the flavor. Zest and juice your lemon into the bowl, being careful not to include any seeds. Mix in the salt and black pepper.
Place your lamb in a large ziplock bag or baking dish. Pour the marinade over the lamb, making sure all areas are well covered. Seal the bag or cover the dish, and refrigerate for at least 2 hours or up to 24 hours. The longer the marinade time, the more flavors will penetrate the meat, making it even tastier.
When you're ready to cook, remove the lamb from the refrigerator and let it come to room temperature before grilling or roasting. This helps to ensure even cooking throughout.
