Oh, how I love to see those shining eyes when the homemade cake or cupcakes are served with this rich and shiny chocolate frosting! I have tried this recipe many times and it has never disappointed. The frosting is smooth, shiny and just the right consistency.

1. Step

To make the chocolate icing recipe yourself, roughly chop the chocolate. I have found that chopping the chocolate helps it to melt more evenly and avoid lumps.

2. Step

Melt the butter in a small, heavy-based saucepan over a low heat. Don't worry if it takes a little while - patience is the key to a smooth glaze.

3. Step

Once the butter is melted, add the chopped chocolate, coffee (if using) and honey. I recommend adding the coffee as it makes the chocolate deeper and richer, but it is optional.

Allow to melt, stirring constantly, until the mixture is smooth. Resist the temptation to increase the heat to speed up the process - you don't want your chocolate to burn!
