Little Crullers
Little Crullers are traditional small German fried pastries that are particularly popular during Carnival or Shrovetide. They are primarily made from yeast dough and are often dusted with powdered sugar.
Ingredients
Dough
- 500 g flour
- 50 g sugar
- 2 Eggs
- 1 pinch of salt
- 20 g yeast
- 250 ml milk
- 50 g butter
For frying
- 1 l oil
For dusting
- 100 g confectionery sugar

Directions
1. Mix flour and sugar in a large bowl. Add the eggs, salt, yeast, milk, and butter and process everything into a smooth dough. Let the dough rest, covered, in a warm place for about 2 hours.
2. Heat the oil in a deep pot or a fryer. Shape small balls from the dough and carefully place them into the hot oil. Fry the fritters until they are golden brown and turn them regularly during frying.
3. Allow the finished fried doughnuts to drain on kitchen paper and dust them with powdered sugar. Serve the doughnuts warm or let them cool and enjoy them later.
