Lamb trotters
Lamb trotters are a very popular traditional dish in Spain. Although they require some preparation time, the end result is a delicacy worth tasting.
Ingredients
- 4 lamb
- 1 onion
- 1 green bell pepper
- 2 carrots
- 4 cloves garlic
- 1 sheet Laurel
- salt
- pepper
- olive oil
- 1 of beef broth
- 1 of white wine

Directions
Wash the lamb trotters well and cook them in a pot with water and salt for about 20 minutes. After this time, drain and set aside.
In a large saucepan, add a dash of olive oil and when it is hot, add the onion, green bell pepper, carrots and garlic, all previously chopped. Let everything sauté over medium heat for about 15 minutes.
Add the lamb trotters to the pan, add the bay leaf and season with salt and pepper to taste.
Turn up the heat a little and add the glass of white wine. Let the alcohol evaporate for a couple of minutes.
Add the beef broth to cover the trotters and let it cook together over medium heat for about 1 hour, until you see that the trotters are tender.
If during cooking you see that the broth is being consumed too much, you can add a little more.
To know if the trotters are well cooked, prick them with a fork. If there is no resistance, they are ready.
Serve hot and enjoy this delicious dish.
