1. Step

Crush the garlic clove with a knife and chop finely. Add a pinch of salt and mash into a paste with the back of a spoon.

Put the soy sauce, vinegar, crushed garlic, ginger, pepper and sesame oil in a bowl. Mix well. Add the grapeseed or vegetable oil in a thin stream while whisking constantly.

Prepare the soba noodles. Strain and wash under cold water. Place in a bowl.

Put the sesame seeds in a dry frying pan and toast them for a few minutes until they start to brown.

Cut the carrot in two and shave off thin slices with a vegetable peeler.

Add the slices to the bowl with the noodles along with the cucumber, pepper, spring onions and toasted sesame seeds.
