How to make Zha Jiang Mian Fried Sauce Noodles
Zha Jiang Mian, also known as Fried Sauce Noodles, is a popular Northern Chinese dish that combines savory ground pork with fermented soybean paste, freshly cooked noodles, and an assortment of refreshing vegetables. Ingredients
For the Sauce:
- 2 tablespoon Cooking oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1⁄2 Cup ground pork
- 1⁄2 Cup sweet bean sauce
- 2 tablespoon soy sauce
- 1⁄2 Cup water
For the Noodles:
- 4 ports of fresh wheat noodles
For the Garnishes:
- 1 cucumber, julienned
- 1⁄2 Cup bean sprouts, blanched and shocked in cold water
- 2 green onions, chopped
- Optional: one cup of radishes, tofu or other preferred toppings

Directions
Begin by heating the cooking oil in a large pan over medium heat. Add in the finely chopped onion, stirring until the onion is transparent and begin to brown.
Add the minced garlic to the pan and stir continuously until fragrant.
Now add the ground pork to the pan, breaking it up and stirring until it's fully browned.
Stir in the sweet bean sauce and soy sauce. Pour in the water, stirring well to ensure the sauce is evenly mixed. Lower the heat and let the sauce simmer for about 20 minutes, or until it thickens slightly.
While the sauce is simmering, prepare the noodles according to the package instructions. Drain them and set aside once cooked.
To serve, divide the cooked noodles into four bowls. Top with the sauce and garnish with the cucumber, bean sprouts, green onions, and any additional toppings you've chosen. Enjoy your Zha Jiang Mian while hot for the best flavor!
