1. Step

With the help of a mould, cut out 8 hearts. Leave four of them whole and cut out the central part of the other four with a smaller mould.

2. Step

Prick whole hearts with a fork and brush with a beaten egg. Place the cut-out ones on top and brush again.

3. Step

Bake at 190 ºC for about 15 minutes, leave to cool and empty the inside.

4. Step

In a bowl mix the endive, red cabbage, red lettuce and arugula with the diced cheese, raspberries and topping of berries and mango to taste. Season with salt and pepper.

Fill the puff pastry hearts with the salad and garnish with balsamic cream and honey.
