- 8 egg
- ice water
- 1⁄3 Cup heavy cream
- 2 teaspoon Dijon mustard
- 2 teaspoon olive oil
- 1 teaspoon lemon juice
- 1⁄2 Cup feta
- 1⁄4 smoked paprika
- 1⁄4 teaspoon ground black pepper
- 2 tablespoon chives
- 1 Package pork or beef chorizo sausage

Directions
Place eggs in a pot and cover with water. Bring to a boil over high heat. Cover and remove from heat. Let stand for 12 minutes. Place eggs in ice water and allow to cool.

Remove shells from eggs and cut them in half lengthwise. Remove yolks to the bowl of a food processor along with cream, mustard, olive oil, lemon juice, Feta cheese, smoked paprika, and black pepper. Blend for 1 minute, wiping the sides of the bowl with a spatula. Stir again for 30 seconds. Transfer to a bowl, add the chives and mix. Transfer to a piping bag fitted with a star tip. Set aside.

Preheat a small frying pan over medium heat for 1 minute. Add chorizo and cook for 10 minutes. Set aside.

Place egg halves on a serving plate. Add about 1/2 tsp of chorizo sausage to each half. Fill each half with the yolk mixture. Garnish each with 1/4 tsp of the remaining chorizo. Serve and enjoy!
