- 2 boneless, skinless chicken breasts
- 1 medium onion, quartered
- 2 cloves garlic, halved
- 1 bay leaf
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 4 crusty bread rolls
- 1⁄4 Cup mayonnaise
- 1 tablespoon Chopped fresh parsley
- 1 tablespoon chopped fresh chives

Place the chicken breasts in a large pot and add enough water to cover them. Add onion, garlic, bay leaf, salt, and pepper.
Bring the pot to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the chicken is cooked through and tender.
Remove the chicken from the pot and reserve some broth. Let the chicken cool for a few minutes.
While the chicken is cooling, prepare the dressing by mixing together the mayonnaise, parsley, and chives.
Shred the cooled chicken using two forks and place it into a large bowl. Pour the dressing over the chicken and mix until well-coated.
