- 3 in oil
- 120 g Organic Gluten Free Flour Blend
- 1 tablespoon Aluminum Free Baking Powder
- 1⁄2 teaspoon Pink Himalayan Salt
- 1⁄2 teaspoon dry mustard
- 1⁄2 teaspoon cayenne pepper
- 1⁄2 teaspoon Seasoning Salt
- 2 yolk
- 177 ml Gluten free beer
- 454 g fish fillet
- 56 g maize starch

Whisk together the dry ingredients in a medium-sized bowl and set aside. Beat the egg yolks in a small bowl and add them to the dry mixture, but do not stir. Then, pour the beer and whisk all the ingredients together. Set aside.

In a separate shallow dish, add the cornstarch and seasoning. Dredge the fish through and set it aside.

Then, drop pieces of fish into the batter. Coat each piece entirely. Remove pieces of fish one by one. Allow excess batter to drip off.

Heat vegetable oil to 163°C. Place the battered fish into the oil. Fry for several minutes on both sides until golden brown.

Remove the fish from the hot oil. Place on a platter lined with a paper towel to absorb the excess oil. Repeat until all the fish has been fried.
