- 4 rashers bacon
- 3 medium onion
- 500 ml Beef Stock
- 3 tablespoon vegetable oil
- 3 tablespoon plain flour

Begin by peeling the onions and chopping them in half, then slicing them thinly into half-moons.
Gently cook the onions in a little oil on low/medium heat, stirring frequently until they are browned, for about 20-30 minutes.
Sift in 2 tablespoons of flour, stirring well to get it absorbed by the pan juices. Let it cook for about 5 minutes. Stir occasionally.
Stir in the stock and cook until it thickens. Then, pour it into a jug. The gravy is ready!
Slice the liver into strips and dredge them in flour.
Heat some oil in the pan and cook the liver strips for 3-4 minutes on each side.
Cut the bacon into strips the same size as the liver and add it to the pan when the liver is half-cooked.
Pour the gravy back into the pan with the meat and cook through for a few minutes.
Serve the liver and bacon with mashed potatoes and cabbage or another green vegetable. Enjoy!
