How to make Healthy Lumberjack Cake

- 2 cups All Purpose Flour
- 11⁄2 teaspoons baking soda
- 1⁄2 teaspoon salt
- 1 Cup unsalted butter softened
- 1 Cup crystal sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 Cup buttermilk
- 2 apples
- 1 Cup chopped pecans

Directions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan and set aside.
In a medium bowl, mix together flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mix well with each addition. Stir in the vanilla extract.
Gradually add the dry ingredients, alternating with the buttermilk. Begin and end with the dry mixture, mixing until just combined.
Gently fold in the chopped apples and pecans until evenly distributed throughout the batter.
Pour the batter into the prepared cake pan, spreading it evenly. Bake in the preheated oven for 40-45 minutes.
While the cake is baking, prepare the maple glaze, store-bought or homemade. In a small saucepan, melt 1/2 cup butter over medium heat. Stir in 1/2 cup brown sugar, 1/4 cup maple syrup, and 1/4 cup heavy cream. Bring the mixture to a boil, then reduce the heat and simmer for 2-3 minutes, stirring occasionally. Remove from heat and let it cool slightly.
Once the cake is done, remove it from the oven and let it cool in the pan. Then, transfer the cake onto a rack.
Drizzle the warm maple glaze over the cooled cake, allowing it to drip down the sides.
