Preheat your oven to 180°C (160°C fan-forced). Line two baking trays with baking paper.

2. Step

In a small saucepan, place the butter, honey and sugar on low heat. Stir until the butter has melted and the sugar has dissolved.

3. Step

Remove the mixture from heat and allow it to cool for a few minutes.

4. Step

In a mixing bowl, combine the sifted flour, baking soda, mixed spice, and ginger.

Pour the melted butter mixture into the flour mixture and stir until a sticky dough forms.

6. Step

Using a teaspoon, drop pieces of the dough onto the prepared trays, leaving space for the biscuits to spread.

Bake in the oven for about 10-12 minutes, or until golden. Remove from the oven and let them sit on the baking trays for 5 minutes before moving them to a wire rack to cool.

Now, prepare the icing. In a bowl, sift the icing sugar and add lemon juice. Stir in the boiling water until the icing is a spreadable consistency. If using, add the food colouring and mix well.
