Directions
Open the breasts and thin them with a mallet. Season with salt and pepper and fill with the bacon rashers, like a sandwich.
Pass the supremes, orderly, by half a cup of flour, two beaten eggs and half a cup of ground bread.
Fry the supremes, on both sides, in a pan with oil for 4 minutes per side.
Cook the corn in milk with a pinch of sugar for 20 minutes. Strain and reserve the corn and milk.
Heat the butter in a saucepan over medium heat and fry the onion. Add a tablespoon of flour and brown.
Add the corn milk and cook, stirring, until thickened. Season with grated nutmeg, salt and pepper. Add the corn, remove and add the previously beaten yolk.
Pass the plantains through two beaten eggs and half a cup of bread crumbs. Brown them in a skillet over medium heat with oil.
Serve the Maryland supremes with fried plantains and creamed corn. Accompany with shoestring fries. Enjoy!
