1. Step

Preheat the oven to 160°C. Grease the cake tin with 1 tsp oil and dust with 1 tbsp plain flour. Set aside.

2. Step

In a jug, mix together the whole milk and lemon juice. Set aside for 10 minutes. Add the oil and rosewater. Mix

In a large bowl, whisk together the flour, milk powder, semolina, cornflour, sugar, baking powder, baking soda, salt, cardamom and saffron.

Add the milk mixture and beat briefly until smooth, about a minute.

Pour the cake batter into the greased and floured tin. Bake for 60 minutes.

6. Step

Remove the cake from the oven and let it cool for 15 minutes. Invert the cake onto a wire rack. Let it cool.

7. Step

In a small saucepan, mix the sugar, water, lemon juice, rosewater, cardamom and saffron. Bring to a boil and simmer until obtaining a slightly sticky texture. Then, add some lemon juice.

8. Step

Carefully drizzle the syrup over the cake until all the syrup is used. Sprinkle with pistachios. Let it cool and enjoy.
