Directions
Season the chicken breasts with salt and pepper on both sides. In a skillet, heat olive oil over medium-high heat. Once hot, add the chicken and cook until browned and cooked through, about 6 minutes per side. Remove the chicken from the skillet and set aside to rest.
In the same skillet, heat the remaining olive oil and butter. Once the butter has melted, add the diced onion and minced garlic. Cook for about 2-3 minutes.
Add the arborio rice to the skillet and stir to coat it with the onion and garlic. Toast the rice for about 2 minutes constantly.
Begin pouring in the chicken broth, about 1 cup at a time. Stir the mixture occasionally, allowing the rice to absorb the broth before adding more. Continue this process until the rice is cooked, which should approximately 20-25 minutes. The risotto should be creamy and al dente.
While the risotto is cooking, shred the cooked chicken breasts using two forks. Set chicken aside.
Once the risotto is cooked, stir in mushrooms, peas, shredded chicken, and grated Parmesan cheese. Let cook until the mushrooms and peas are tender.
Season with salt and pepper. Enjoy adelicious and flavorful meal!
