Directions
Start by ensuring that your prawns are cleaned and deveined correctly. Trust me, this step brings out the best taste of prawns.
In a hot pan, add olive oil, waiting for it to glimmer before we move to the next step- which is a great method to determine if the oil is ready.
Now, toss in the finely chopped garlic and red chillies. Carefully stir this, ensuring to not let the garlic burn- remember, burned garlic can introduce an unwelcome bitter flavor.
Once the garlic and chilli have softened, which usually takes about a minute, add the prawns. Season them generously with salt and pepper.
Cook the prawns until they turn pink- a good indication that they are cooked. This should take approximately 4-5 minutes.
Now, add the soy sauce and fresh lemon juice- the acid in these components balance the heat and provide depth to the dish.
Cook this concerto of flavors for another minute. Remember not to overcook prawns or they become rubbery.
Sprinkle over the chopped parsley, give everything a final stir, then serve immediately over a bed of steamed rice.
Enjoy every bite of this burst of flavors - each a testament to the beauty of simple, fresh ingredients!
