Directions
Start by seasoning your salmon fillets on both sides with salt and pepper. This is an important step as it enhances the natural flavors of the salmon.
Heat a pan over medium-high heat and add the olive oil. Once the oil is hot, add the salmon skin side down. Gently pressing down ensures even and thorough cooking. Pan-sear for about 4-5 minutes on each side until the skin is crispy and the fish is just cooked.
While your salmon is searing, you can prepare your salad. In a large bowl, combine the roughly torn romaine hearts and halved cherry tomatoes.
Once your salmon is cooked, allow it to rest for a few minutes. This locks in the juices and makes for a more tender fish.
Toss your salad with your chosen Caesar dressing. I find store-bought to be very convenient, but making from scratch gives you control over the flavors.
Now, it’s time to assemble. Divide the salad into 4 separate servings. Place a piece of cooked salmon on top of each serving.
Finish off by sprinkling fresh parmesan cheese over your salads. Add croutons for an extra crunch and don’t forget a squeeze of lemon right before serving. The acid brightens up the flavours and breaks through the richness of the salmon.
