- 4 tbls cold unsalted butter, cut into small pieces
- 8 ounces grated Cheddar cheese
- 31⁄2 tbls water

In a food processor, combine the flour, salt, and pepper. Add the butter and pulse until the mixture is like coarse breadcrumbs.
Add the grated cheese, one portion at a time, and pulse until well combined.
Gradually add water, one tablespoon at a time, until the dough comes together.
Divide the dough into two. Flatten each half into a disk and wrap it in plastic wrap. Chill in the fridge for 1 hour or until firm.
Preheat the oven to 350° F (175° C) and line two baking sheets with parchment paper.
Roll out each dough to 1/8 inch thick on a lightly floured surface. Cut out crackers using a small round cutter and place on the prepared baking sheets.
Bake for 15-20 minutes, or until golden and crispy. Let them cool completely before serving.
