Directions
Combine the flour, salt, and pepper in a food processor. Blend for a few seconds until incorporated. This dry mix ensures that each cracker achieves an even flavor distribution.
Add the butter and cheese into the flour mixture in the food processor. Make sure to distribute the cheese and butter evenly to avoid clumps. Process until the mixture forms tiny, sand-like granules.
Slowly add ice water, one tablespoon at a time, until the dough comes together. You will see the dough start to form into a ball, be sure not to overmix to avoid a tough texture.
Transfer the dough onto a clean, flat surface, and knead for about a minute until it becomes smooth. The more the dough is worked, the more the gluten develops, which provides our crackers with their perfect crunchy texture. Then wrap the dough in plastic wrap and refrigerate for at least an hour.
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. This step guarantees that your crackers won't stick or burn.
Roll out the dough onto a lightly floured surface to about 1/8 inch thick. Use a sharp knife or a pizza cutter to cut the dough into squares or your preferred shapes.
Place the pieces onto the prepared baking sheet, spacing slightly apart. You can poke the surface of each piece with a fork if you wish to prevent puffing.
Bake the crackers for about 12-15 minutes, or until the edges are golden brown. Baking times may vary, so it's best to keep an eye on them from the 10-minute mark onwards.
Allow the crackers to cool completely before serving. Cooling allows the texture to set up properly, consequently enhancing the flavor.
